Peppermint chocolate cookies
1/2 cup coconut oil
2/3 cup coconut sugar
1 egg (or 1 flax egg)
1 tsp peppermint extract
1/2 tsp baking soda
1/2 tsp salt
3/4 cup cocoa powder
1/2 cup chocolate chips
350F 10 minutes, cool 15 minutes

healthy Shortbread cookies
– 1/2 cup cassava flour
– 1/4 cup almond flour
– 3 tbsp coconut oil
– 1/4 cup maple syrup
– 2 tsp vanilla
350F 10-12 minutes

Healthy Gingerbread cookies
– 2 tbsp coconut oil
– 1/3 cup nut butter
– 1/4 cup coconut sugar
– 2 eggs (or 2 flax eggs)
– 1 tsp vanilla
– 1/2 cup coconut flour
– 1 tbsp molasses
– spice blend: 1/4 tsp nutmeg, 1 tsp cinnamon, 1/2 tsp cardamom, 1/4 tsp clove, 1/4 tsp ginger
350F 11 minutes
