BRIEF HISTORY OF THE MARGARITA
According to cocktail historian David Wondrich, the margarita is merely a popular Mexican and American drink, the Daisy (margarita is Spanish for “daisy”), remade with tequila instead of brandy, which became popular during Prohibition as people drifted over the border for alcohol. There is an account from 1936 of Iowa newspaper editor James Graham finding such a cocktail in Tijuana, years before any of the other margarita “creation myths”.

CLASSIC MARGARITA
The classic Margarita recipe is a simple 3:2:1 ratio of strong, sour and sweet. No need for adding extra simple syrup as the sugar content of the triple sec/Cointreau balances the sour. Margaritas are a party drink so I like to serve them in an old fashioned glass over ice!

INGREDIENTS
– 45mL Blanco Tequila (1½ oz)
– 15mL Triple Sec (½ oz)
– 30mL Fresh Lime Juice (1 oz)

METHOD
1. Rim the glass with salt – moisten the glass with a piece of lemon or lime and place upturned onto a plate of salt
2. Combine all ingredients into your cocktail shaker
3. Shake with ice
4. Strain into a chilled coupe or margarita glass
5. Garnish with a lime wedge or wheel

TOMMY’S MARGARITA
The Tommy’s Margarita has very little variation from a traditional Margarita. With a touch more tequila and the replacement of Triple Sec with agave syrup. 15mL of agave syrup is plenty otherwise it will overtake the drink.

INGREDIENTS
– 60mL Tequila (2 oz)
– 30mL Fresh Lime Juice (1 oz)
– 15mL Agave Syrup (½ oz)

METHOD
1. Combine all ingredients into your cocktail shaker
2. Shake with ice
3. Strain over fresh ice into an old fashioned glass
4. Garnish with a slice of lime

FROZEN MANGO MARGARITA
The Frozen Margarita is the perfect summer, Tequila cocktail with versatility. Utilise a multitude of different fruits to customise your Margarita – Strawberry and Mango and two favourites!

– Mango Puree, Pulp or Cheeks

1. Combine all ingredients into your blender jug
2. Blend for 20-30 seconds or until smooth
3. Pour into a coupe or Margarita glass
4. Garnish with a lime wheel

CUCUMBER & JALAPENO MARGARITA
A spicy variation on a classic Margarita! The spicy jalapenos pair nicely with the cooling properties of fresh cucumber. Adds a little bit of a kick to your standard Margarita.

INGREDIENTS
– 45mL Blanco Tequila (1½ oz)
– 15mL Triple Sec (½ oz)
– 30mL Fresh Lime Juice (1 oz)
– Cucumber
– Jalapeno

METHOD
1. Muddle a few slices of cucumber into your cocktail shaker
2. Add a few slices of jalapeno (muddling these is optional – hot!)
3. Combine the remaining ingredients into your shaker
4. Shake with ice
5. Dump contents into a salt rimmed old fashioned glass

MEXICAN BULLDOG (Coronita Margarita Recipe)
