10 Keto Casserole Recipes Perfect for Weeknights and Meal Prep

Keto casseroles are a fantastic way to make one meal but get lots of leftovers out of it. Here’s a collection of some of our favorite keto casseroles to cook up on weeknights or to use as meal prep. If you want something that’s hearty and will last for several meals, these will be your new go-to keto-friendly recipes.

Feel free to meal prep one or two of these casseroles on the weekend, portion it out into separate Tupperware, and take it to work for a super easy lunch. Or, cook it up for some super easy dinners on a night you don’t want to cook. All of these casseroles will freeze well except for the Reuben Rolls. The cabbage doesn’t freeze and re-heat super well, so keep that in mind. It works much better in the fridge and leftovers being used that week.
