One of our favourite snacks, Fafda, can look daunting but is actually easy once you get the hang of it. Here’s my recipe for Fafda served hot with Jalebi and some memories.

Preparation time 10 minutes
Cooking time 20-25 minutes
Serving 2

1 cup Gram flour, बेसन
¼ tsp Carom seeds, अजवाइन
1 tsp Papad Khar, पापड़ खार
Salt to taste, नमक स्वादानुसार
3 tsp Oil, तेल
1 tsp Oil, तेल
Water as required, पानी
Oil to deep-fry, तेल तलने के लिए

For Papaya Kachumber
2 tbsp Oil, तेल
1 tsp Mustard seeds, सरसों के बीज
1 sprig Curry leaves, कड़ी पत्ता
4-5 fresh Green chillies, thinly sliced, हरी मिर्च
½ tsp Turmeric powder, हल्दी पाउडर
1 cup Raw Papaya, grated, कच्चा पपीता
Salt to taste, नमक स्वादानुसार
½ tsp Sugar, चीनी
½ small Lemon juice, नींबू का रस

In a large bowl, add gram flour, carom seeds, papad khar, oil and salt together.
Add water and knead into a soft dough. Now apply the remaining oil and knead it once.
Take a portion of the dough and place it on a greased surface.
With the base of your palm, drag the dough in a straight line, holding the dough at the starting point with the other hand this will form a strip.
Heat oil in a kadai on medium flame.
Fry these strips over medium heat till crisp.

For Papaya Kachumber
In a pan heat oil, add mustard seeds, curry leaves, green chillies, turmeric powder and saute for a minute.
Now add grated papaya, salt, sugar and continue cooking for 2 minutes.
Finish with lemon juice and switch off the flames and serve with fafda.
