Heat 1/2 cup rice flour with1 cup water and 1 tbsp sugar in a sauce pan. Whisk until thick. Grind 1 cup grated coconut along with the heated paste into fine consistency. Also mix in a tsp of yeast. Mix 2 cups of rice flour, blended paste and a little water. Let the batter ferment for 8-10 hours. The rice flour pancakes can be made from this batter on an appam pan.
RAW PLANTAIN SIDE DISH:
Peel a plantain and cube it into pieces.Allow it to boil in a sauce pan containing boiling water until soft. Cook it further more into a mash able consistency if serving to little babies.Season a pan with coconut oil and add 1 tsp mustard, curry leaves, 1 green chilli, 1 tsp urad dal, 1 tsp chana dal and add the cooked plantain into it. Season with turmeric and salt. This simple dish can be served with rice/ chapati and is a great source of prebiotics.
BROKEN RICE PORRIDGE:
Boil 1 cup broken rice along with 7 cups water and once cooked, add salt 1/4 cup of coconut milk. Serve the soup with pulses as shown in the video
